How to make a great Pina Colada

Ok so as promised earlier here is the way to make a great "Pina Colada" the secret is ice cream. Yes ice cream makes everything better. I like to use a premium rum either Malibu Rum or Parrot's Bay both have a coconut flavor to them. I also like to make my own Pina Colada mix.


There is an easy recipe for pina colada mix: 1 can of Coco Lopez found at your local grocery store at the mixer isle or at any liquor store and 4 parts of pineapple juice.


What you do is take the can of Coco Lopez and empty it into your blender, make sure you spoon it all out. Then take the same can and fill it four times with pineapple juice.... don't be cheap buy the good stuff. Pour this mixture into a pitcher or container to use as needed. You definitely want to use it within a week though it will go bad.


Now you're ready to make the Pina Colada. In your blender add:


Ice (about 1/4 of the container.)


1 1/4 oz of your rum.


1 Scoop of Ice Cream (I usually use Blue Bell Homemade Vanilla)


Fill with Pina Colada mix. (Not all the way to the top, you want to make sure it is about 1 inch from the top of the ice. This will ensure that your consistency is good. What you want is for the texture to be like an Icee where it holds it's shape when you put a straw in it.)


Blend it all up and enjoy!!!


Usually we would add a Pinapple Flag to this. (Pineapple and Cherry)
